5-min sweet potato with boursin, tomatoes, and nuts
with salad and french viniagrette
Lunch « Pas Chère » Episode 4 - baked sweet potatoes with boursin, salas and nuts paired with a side of salad. Cheap lunch doesn’t mean ridiculously cheap that you don’t get the right nutrients and food to keep you going for the day. Because snacks are expensive. So focusing on a good but non expensive meal is key!
ingredients
1 sweet potato pp
Boursin cheese
some cherry tomatoes
nuts
salad greens
French vinaigrette
for the vinaigrette
3 tbsp red wine vinegar
salt and pep
1 tbsp whole grain mustard
5 tbsp veg oil
4 tbsp olive oil
1-2 tbsp water to lighten
steps
Prick the sweet potatoes with a fork and cook them in the microwave for 5 minutes
Open the sweet potatoes, add some butter, and a generous amount of boursin and let the boursin melt
Top the sweet potato with tomatoes and nuts
Add some salad greens to the side and top with French vinaigrette
