beef soba noodles

with green beans

Dug into the RecipeTinEats' earlier recipes and found this gem! We already make a lot of soba in this household and love a steak so this was an instant win. SO tasty.

ingredients

for the dressing

  • 1½ tbsp light soy sauce

  • 2½ tbsp peanut oil - we did a mixture of sesame and vegetable oil since we didn't have peanut oil

  • 2 tbsp rice vinegar - we reduced it from 3 to 2! I suspect our rice vinegar is stronger than Nagi's

  • 1 tbsp mirin

  • 2 tsp brown sugar

  • 2 tsp ginger, minced

  • 1 clove garlic, minced

for the bowl

  • 300g rump / sirloin / blade beef steak, excess fat trimmed

  • 1 tsp vegetable oil

  • 2 bundles of soba

  • 200g green beans, trimmed

steps

  1. Take the steak out of the fridge 30 minutes prior to cooking (or 15 minutes if it's a stinking hot summer day).

  2. Combine dressing ingredients in a jar and shake.

  3. Heat the oil in a skillet over high heat until smoking, then cook the steak to your liking. For medium rare (so it's perfect for absorbing the flavours of the delicious dressing), Nagi recommended 2 mins on the first side and 1 min 45 secs on the second side for her rump steak; but for the thickness that we got, we had to lower to 1½ min on one side and 1 min on the other side.

  4. Transfer to a plate and loosely cover with foil. Rest for 5 minutes, then slice into fairly thin slices against the grain (i.e. find the direction of the fibres then cut at a 90 degree angle straight through them).

  5. Meanwhile, bring a pot of water to boil. Cook the soba according to packet instructions (usually 5 minutes). For the last 1 minute of cooking, add the green beans.

  6. Drain the noodles and beans and rinse under cold water to stop them from cooking further and to cool the noodles. Roughly separate beans from noodles.

  7. To serve, divide the noodles between 2 bowls, top with the beans then the steak slices. Drizzle with the dressing (over the steak and noodles), then garnish with sesame seeds.
