The key thing about this recipe is the bok choy blanching and dumpling boiling technique!
How to blanch bok choy
Bring a pot of water to boil and add a pinch of salt. Add bok choy and blanch for 1-2 minutes.
How to boil dumplings
Bring a pot of water to boil. Add dumplings. Do 3 rounds of wait for water to boil again + add ½ cup of cold water. After the 3rd time of adding ½ cup of cold water and the water reboils again, it's done.

ingredients
for the ginger garlic bok choy
2lb bok choy, cut into half
salt
6 clove garlic, minced
2 tbsp ginger, minced
3 tbsp light soy sauce
2 tbsp Shaoxing wine
2 tbsp oyster sauce
2 tsp sesame oil
1 tsp sugar
cooking oil
for the dumping dipping sauce
2 clove garlic, minced
4 tbsp light soy sauce
2 tsp rice vinegar
2 tsp sesame oil
1 tsp white sesame seeds
steps
for the ginger garlic boy choy
Wash and cut bok choy into half.
Bring a pot of water to a boil and add a pinch of salt. Add bok choy and blanch for 1-2 minutes. Drain and set it aside.
In a pan, heat 1 tbsp of cooking oil. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
Add soy sauce, Shaoxing wine, oyster sauce, sesame oil, and sugar. Mix and let it simmer until the sauce thickens.
Arrange the blanched boy choy on a serving plate. Pour the garlic ginger sauce over the bok choy. Serve hot immediately.

Bring a pot of water to boil
Once boiling, add your frozen dumplings
Wait for the water to boil again
Add ½ cup of cold water
Repeat step 3 & 4
Repeat step 3 & 4
Once the water starts boiling again, the dumplings are done! Turn off the heat, transfer the dumplings to a plate, and serve hot with your favorite dipping sauce!
