No dishes. 15 minutes. A healthy, delicious meal. That's fish en papillote! It sounds fancy, but it's really just steaming your dinner in a paper pouch. You can cook it in an air fryer, the oven or even the microwave. The best part? Everything cooks perfectly in one go. The green beans stay crisp-tender, the tomatoes burst with juice, and the fish turns out flaky and soft.

ingredients

  • 1 fish fillet (about 200g) — cod, salmon, or any white fish

  • A handful of green beans, trimmed and halved

  • A handful of cherry tomatoes, halved

  • A small handful of pitted olives, roughly smashed (Castelvetrano or Kalamata work great)

  • 1 sprig of thyme

  • Olive oil

  • Salt and pepper

  • Parchment paper

  1. Cut a large square of parchment paper (about 40x30 cm) and place it flat on your counter.

  2. Place the green beans in the center of the parchment. Lay the fish fillet on top and season it with a pinch of salt.

  3. Scatter the cherry tomatoes and smashed olives over the fish. Add the sprig of thyme.

  4. Drizzle everything with olive oil and season with a little more salt and freshly ground pepper.

  5. Fold the parchment over the fish and crimp or twist the edges to seal it like a packet. (It doesn't have to be fancy—just make sure it's closed so the steam stays inside.)

  6. Cook in the oven: Bake on a tray at 190°C (375°F) for 15 minutes.

  7. Let the packet sit for 2 minutes before opening (watch out for hot steam!). Serve directly in the parchment or plate everything up.

Juss Note: Cooking time can vary based on the thickness of your fish fillet. You can open it up and check at 15 minutes and cook longer if needed. Serve with crusty bread, couscous, or quinoa for more carbs.
