We visited Harris' place the one time and she absolutely blew us away with her cooking. The star of the show? The shitake mushrooms with lettuce.

Soak the mushrooms for 2-3 hours.
Pro-tip from Harris: 通常我用1cup可以浸三隻琴日果種size 既冬菇~ 其實夠水浸哂成隻就得架喇冇話要好準既水量。反而要注意d菇會浮面所以要搵野「擇」住等佢浸到水
to make the dish
Add some garlic and mushroom to the pan and stir fry a bit
Add ⅔ of the mushroom water to boil for a few minutes
Add lettuce and add 1 tbsp of oyster sauce to simmer for a few minutes or until the lettuce softened. If the pan drys out while cooking, add a bit more of the mushroom water
Then add a bit of salt and taste whether the seasoning is ok, if not you can add add more salt or oyster sauce
