soy miso taiwanese noodles in soup

Emily made this for us when we visited, and we haven't stopped making it at home since!

ingredients

  • A big tbsp of miso paste

  • Dash of soy sauce

  • Couple of tsps of mushroom powder

  • Noodles: our favourite is 五木山東拉麵 (medium)!

  • Veg of choice: soft tofu, spinach, broccoli, king oyster mushrooms, napa cabbage etc. But really, any veggie or meat that you have in the fridge works. This soup base is very comforting so there's no ingredient that doesn't go with it!

steps

  1. Bring pot of water to boil

  2. Chuck in the miso paste, soy sauce, mushroom powder

  3. Chuck in the rest of your ingredients depending on how long you prefer each to be cooked. For example, if you have tofu, spinch, napa cabbage, and noodles, you'll want to chuck in the napa cabbage first; then the noodles a minute later, then only put in the spinach and tofu in the final minute.
