  • 5 tablespoons soy sauce, regular or dark

  1. Bring some water to boil then gently put the eggs into the boiling water.

  2. Boil the eggs for precisely 7 minutes, then ice the eggs right after you remove it from the pot (or run it under cold water until it's cool).

  3. Peel the eggs, and rinse with water to remove any tiny shell fragments.

  4. Bring the soy sauce to a boil. Turn off the heat, and add the peeled soft-boiled eggs. Use a rubber spatula or wooden spoon (so the eggs don't become nicked), gently roll the eggs around, coating the eggs with the soy sauce mixture.

  5. Continue to steep the eggs with soy sauce until they reached your desired colour or saltiness - 1 to 2 minutes for lightly salted flavour, 5 minutes or longer for well-salted flavour. My personal preference: 3 minutes with the dark soy sauce.

  6. Serve and enjoy.
