spicy salmon power bowl on quinoa
with broccoli and avocado
Wow I'm usually super suspicious of Instagram recipes but this one is a total winner! The punch of the spicy sauce is perfectly paired with the freshness of the avocado.
ingredients
for the spicy sauce
2 tbsp sriracha
2 tbsp soy sauce or tamari
1 tsp crushed garlic
1 tsp crushed ginger
2 tbsp lime juice
½ sesame oil
for the bowl
a small head of broccoli
100-150g tricolour quinoa (cook with ½ tbsp vegetable bullion
150-200g salmon per bowl or 300g firm tofu or other protein of choice
sprinkle of sesame seeds on top

Put the quinoa on to boil according to the packet instructions with the ½ tbsp of bullion or stock cube
Mix the sauce marinade ingredients together and set aside
Pan fry the salmon (start with the skin facing down) until the internal temp has reached 145°F
Turn down the heat and add the spicy sauce. At this point I like to take a spoon and flake the salmon in big chunks off of the skin so that I can mix the salmon into the thickened sauce
Lightly fry off the broccoli until bright green, with a pinch of salt
Assemble quinoa first, then salmon and broccoli. Then slice up an avocado and place on top. Sprinkle with sesame seeds and you're done!
If you're going the tofu route at step 3 - break the tofu into small chunks with your hands; toss in the cornstarch and fry in olive oil for a few minutes, turning every now and then until the edges are golden. Add sauce, cover well and turn down the heat, move chunks around the pan until sauce is thick and glossy. Take off the heat. Continue with broccoli then assembly.
