summer steak caprese

with sourdough

The blistered caprese is so so so so good.

Serves 1

ingredients

  • 200g sirloin

  • cherry tomatoes

  • mozzarella balls

  • basil

  • loaf of sourdough

  • balsamic glaze

  • olive oil

  • salt and pep

for the blistered caprese

  • Add cherry tomatoes to an ovenproof dish with a drizzle of olive oil, salt, pepper, and a splash of balsamic glaze

  • Grill on high for about 10 minutes or until blistered and juicy

  • Once out of the oven, add mozzarella balls and chopped basil

for the steak

  • Marinate your steak (e.g. 200g sirloin) in 2 tbsp balsamic vinegar, 2 tbsp olive oil, 2 minced garlic cloves, 1tsp Dijon mustard, and a good pinch of salt and pepper. You can marinate overnight for more flavour, but even 5-10 minutes while you prep the rest works perfectly

  • Cook steak on high heat - 1.5-2 mins per side for a thick cut sirloin

  • After flipping, baste with leftover marinade

  • Once done, let it rest for 10 minutes

for the sourdough

  • Toast slices of sourdough in a pan with olive oil. I used a clean pan, but you could use the steak pan to soak up all that flavour. You can also just use a toaster
