summer steak caprese
with sourdough
The blistered caprese is so so so so good.
ingredients
200g sirloin
cherry tomatoes
mozzarella balls
basil
loaf of sourdough
balsamic glaze
olive oil
salt and pep

for the blistered caprese
Add cherry tomatoes to an ovenproof dish with a drizzle of olive oil, salt, pepper, and a splash of balsamic glaze
Grill on high for about 10 minutes or until blistered and juicy
Once out of the oven, add mozzarella balls and chopped basil
for the steak
Marinate your steak (e.g. 200g sirloin) in 2 tbsp balsamic vinegar, 2 tbsp olive oil, 2 minced garlic cloves, 1tsp Dijon mustard, and a good pinch of salt and pepper. You can marinate overnight for more flavour, but even 5-10 minutes while you prep the rest works perfectly
Cook steak on high heat - 1.5-2 mins per side for a thick cut sirloin
After flipping, baste with leftover marinade
Once done, let it rest for 10 minutes
for the sourdough
Toast slices of sourdough in a pan with olive oil. I used a clean pan, but you could use the steak pan to soak up all that flavour. You can also just use a toaster
