sweet potato brownies
with vanilla icecream

During the 1-2 weeks before our period, our body needs more energy from food, especially from healthy carbs, like sweet potatoes !! They’re delicious in this recipe (can’t taste them) and a great gut healthy starch !
How to cook the sweet potato? In boiling water until I can stick my knife through it ! :)
ingredients
1 cooked & peeled sweet potato
3 eggs
½ cup maple syrup
6 tbsp flour
3 tbsp cacao powder
¼ tsp baking powder
vanilla extract (optional)
pinch of sea salt
½ cup chocolate chips
steps
preheat your oven to 350F
mix all of the ingredients together in a bowl until there are no more clumps
add the batter to a lined baking dish
bake for 25min
the brownies should look *slightly* undercooked when you take them out, they will firm up as they cook

Note from Joann: vanilla bean Häagen-Dazs is mandatory! This sweet potato brownie is a fork type of brownie, not a pick up with your hands kind of brownie. Best way to serve it is to microwave a piece for 30 seconds and top with a scoop of vanilla ice cream!
